Baked Spiced Prune Sponge

BAKED SPICED PRUNE SPONGE
1 tblsp honey
4 oz stoned prunes
1 tsp lemon juice
2 tblsp chopped nuts
2 oz sugar
2 oz butter
1 egg
4 oz SR flour
half a tsp each of spice and nutmeg
quarter tsp nutmeg
3 tblsp milk

Arrange prunes in bottom of very thickly greased sandwhich tin. Add honey mixed with lemon juice and nuts. Cream butter and sugar, add beaten egg, mix well. Spread over prunes. Bake in mod oven 30 to 35 mins. Turn out, serve hot with clear lemon sauce or custard.
