Honey Oatmeal Breakfast Cakes

50 gram rolled oats
25 gram plain flour
1/4 tsp bicarb soda
t tblsp lemon juice
1 egg
1 tsp honey

Mix together the dry ingredients. Add lemon juice to milk. Beat egg with honey. Stir into dry ingredients, then slowly add the milk. Heat some butter in a frying pan then drop tablespoons of the batter in spacing well apart. Cook over a moderate heat. When the top is just set and the underneath golden, turn and cook the other side. Serve hot with butter and honey. These pancakes are very light and make a change from breakfast toast.
