Honey Speckle Cream

1 cup chopped cooked prunes
1/2 cup honey
1/2 cup chopped nuts
1/2 cup milk
grated rind of 1 lemon
1 tblsp melted butter
1/2 cup partially cooked rice
1 tsp baking powder

Combine all ingredients, mix thoroughly. Pour into greased oven-proof dish. Place dish in shallow pan of hot water, bake in moderate oven for 35 mins. Serve warm or cold with whipped cream if desired. Serves 6
